We are making natto using the selected Japanese soybeans by a special method.

We use almost only selected Japanese soybeans, and never use blend.


We use a water purifier which changes running water to natural water.

The more you stir good natto, the more sticky it becomes in the center of a bowl.
You can see natto covered with clear, fine and sticky thread.
That shows good natto.
Bad natto has frothy, watery, and weak thread.
It isn't covered with thread, and soybeans gather the edge of a bowl.

Good fermentation of natto makes stringy and sticky thread including good amino acid, and also bring out the best quality of soybeans.
Whenever we stir natto, we scoop up it with our chopsticks. (See the left photo)
